Oven cleaning is ok, and we make good money out of doing so. The problem is that you must invest in the right equipment, ppe and chemicals for the job.
For a good industrial steam cleaner you aint gonna get change out of £400, and most of the chemicals have to be used under very controlled circumstances.
IMO, this is not the kind of job that companies should take on if they are not 100% confident of the clean, if in doubt, leave well alone.
I refuse to touch extraction units/cooker hoods as these are also well left to the experts.

I always thought the best way to clean a cooker/oven was a caustic dip tank, loads of elbow grease and plenty of scraping, it seems to work for the companys that do it for a living 
So is steam the way forward?

No, off course not, and I don't think that I ever said that it was....

However, as a domestic and commercial cleaner if you have £2-3000 going spare, then yup your are absolutely right.
My steamer breaks down grease and grime just fine, and used in conjunction with the right chemicals, makes the job easier. However, I will add that I only take on jobs that I know that I can handle, domestic, guest houses, pubs etc with light to moderate build up. Ok, so on average it takes me longer, and the proffesionals would use less harmfull and toxic chemicals. But as you are aware there is more than one way to skin a cat. So as long as you are comfortable with what you are doing, take the job on, if you have doubt, walk away, as I have on hotels, take-aways et al
