Not impossible to do, but very tricky. First thing you must do is check your insurance will cover you for this work, I would say probably no, because of the risk.
For a server room, you will be looking at a false floor with a void for all the wiring; under no circumstances can you allow any water down into the void. (Have you had a site visit?) Usually these floors are tiled (carpeted), also under the carpet tiles should be metal floor tiles, if this is the case, you could in theory lift these take them out the room and clean them and then return them.
What type of method do you use for carpet cleaning?
Also, you will have to make sure all your equipment has been serviced and that you have power breakers on each machine, because if one of them trips, you are in serious trouble. Also use power sockets outside the room.
