I don't employ anymore - it's a mugs game.
But when I did.......
All my blokes were on a percentage, so they had to know the prices. They had to know anyway because they had to collect the money.
It's the only way - the more they work, the more they earn, if they don't work they don't earn.
You can factor in bonuses for reaching targets etc.
As to trusting them: if your vans are signwritten and have your phone number on them and all the paperwork ("windows cleaned" tickets etc) also have your contact details the customer is in no doubt about who his/her window cleaners are.
Tactfully point out to your men that if they do start doing 'foreigners' sooner or later the custy will need to contact you for some reason, and they will be found out and the consequences will be severe.
All employees will try it on to a certain extent, the clever employer will allow for this and let the employee think they're getting away with it. Provided it's only peanuts, it all helps with employee job satisfaction
