I would get them canvassing during the time you dont have work for them or maybe if you can - buy a round first to start them off, then canvass in the extra, just get a small round that will pay wages to start and then any work you canvass will start to be your profit, as for stopping them running off, you need  incentive's to keep them earning well, performance related bonuses, bonuses for showing up on time etc, if you treat them well they shouldnt want to nick your work, only other thing is too keep a good relation with the customers, dont them be the only ones to deal with custies or they will soon forget you and they can take your work then easy, as much of a pain as it is, perhaps you could collect his work once a week and while there just check "everything ok, no complaints? if ever you need anything ring me bla bla" That will make it very difficult for them to pinch your work!

one of the next steps for me is to take on an employee. The main problem I will have will be going from doing to many to not nearly enough. Or quickly biulding up a round for my new employee.

What I would like to ask is,

If you have done this before, what did you do to get round this. Employee canvassers ect?

I think I will start canvasing 2 months before they start...

And the other main worry is someone trying to boycot the round after I've spend a couple of grand biulding it, what preventive measures could I take to stop that happening?

 ???
How do you work ? 4 weekly monthly, 8 weeks 2 monthly, when I first started to employ someone I went from 4 weeks work to 6 weeks solid on a 4 week round, then took someone one and picked up more work via leaflets and word of mouth only. Canvassing is good if you have the money, it is a little of a risk but the benefits far out weigh the negatives if you get the right canvassers.

Good luck on this  ;)
