If you're only going 3 days a week, a 100GPD RO unit will be perfect for you,.. set it up trickle filling a 1000 litre IBC tank.
Have a look at this one:
http://www.ro-man.com/shop/product_info.php/cPath/22/products_id/318
Its on sale at the moment, and comes with a free in-line tds meter (Still buy a hand-held one too!) This unit has a small DI vessel at the end after the RO, so your water should come out perfect. Just flush the membrane every once in a while, change the resin every 3-4 weeks (700mm of resin for each fill,.. won't cost much to run!) and you're laughing.
