I've got a TDS reading of 60 straight out of tap I live in Cornwall which is a soft water area
Do you think I need a RO pole system or could I get away with a DI system

A DI system would be no problem to use with a reading of 60. However, ultimately you would use more resin which in turn equals more running costs than if you had a RO system.
The calculation that you need to make is: cost and quantity of resin over the cost of pre-filters and ro membrane changes with an RO system.
According to the resin calculator, if you used 5000 litres of water a month (part time window cleaner), you would change your resin every 4 weeks on an input of 60ppm. This is obviously just a guide and could last longer/less.
