I want to give the car seats a good clean. Which chemicals/ process would you recommend for best results and drying times.

The easy answer is this...
Your average car seat is going to be made from a synthetic material and very hard wearing, 9/10 times you can simply dry vac and apply a micro spitter such as SPM... agitate well and rinse.
For real mingers you can hit them a little harder using something like Shockwave, just remember to add an acidic product to the rinse tank.
The key to avoiding over wetting is applying just enough pre spray and agitate very well, using a tool such as the CFR will ensure the driest extraction results...

Once you have extracted, towel off the seats and start the engine... set the vents to the lowest position (floor) and increase the temp to max, leave the rear windows open just a fraction and close the doors...

Just remember to cover the centre console with a towel to protect from over spray

I use Autoglym fabric stain remover and interior cleaner or Seldon fabric n seat.

The same way as Russ...Vacuum seats first apply stain remover/interior cleaner with a spray bottle..Dwell and brush in and then extract rinse then dry off with leather/microfibre cloth...Put the heater on job done.

Car seats are manmade very hardwearing material and virtually any cleaning detergent is suitable for cleaning them.
For best drying times as you requested then I would be looking at either Chemspecs fast drying upholstery shampoo, Craftex dry foam shampoo or Prochem fibre shampoo.
Using these, agitating with a brush then vacuming off will provide the quickest drying time.

Car seats as already said are made of tough stuff, non of the usual viscose stuff, so you can hit it hard if need be. CFR tool is the best to extract after prespray/scrub. Forget what valeters charge as hopefully what we can do far surpasses them. Its back breaking work so I only do it if asked , dont go out of my way to get it.
Set a fan up to help drying.

Clean them as you would on dirty upholstery. Switch car engine on and put the heating  and fans on full for 30 mins, that should dry emout
