Anyway in it's basic form venturi is how petrol gets into an engine cylinder when carburettors are used. Air travelling at speed along a tube basically sucks up the fluid along the way which then becomes part of the air mixture which continues it's journey into the cylinder.
That's the very short version - I used to be a mechanic

so how does the venturi work in my hydraforce as its not air thats drawing  the solution but water, and water alone can't draw water (chem) so whats so special that makes the draw work on the venturi?

does it work on the same principle as an aeroplane wing, where the lift is created through the air having to travel further over the top of the wing?

the valve goes from big to small creating a faster water flow rate in the centrwe of the valve thus creating a suction effect that sucks up the chemical

Works the same air as water.
Think of it as a piece of scaffold pipe with a full fast flow of water travelling through it. Now drill a small hole into the pipe and insert a drinking straw so it protrudes just inside the pipe.
Whatever the straw is dipped into will have it's contents drawn into the tube due to a vacuum being created at the top of the straw by a fast flow of water (or air) going past.

no that doesn't work, ive tried it, i need to create draw from a moderate flow of water, i think the venturi has something added inside the tube to give it the extra drawing capabilities, but what? i don't know.
