Got a little mould in the shed where I store my water that I'm going to have to deal with soon but no flies.

Realy tiny little flys are known as fruit flies, so I can't understand why they keep appearing in your van ???

Attracted to all types of sugar- install an aviary then the birds will eat them. ;D If its warmer down south and spring is coming (hopefully) they are probably breeding  :o
never heard of it before so it must be something in the van.  ???

If they are really tiny and seem float around they are either fruit flies- but a bit early, or mosies. Nothing can live in RO/DI water for very long.
Maybe your staff have been drinking/spilt cider.
