Never had this happen.

I was working on a small commercial, this morning, cleaned as normal, but a couple of the old double glazed windows fogged over as I was cleaning them. They were definitely clear before I started and as I finished the condensation was clear to see between the panes? Anyone had this happen to them?

As above, when the temperature of the glass and the air between the panes rises again, the fogging should clear. It happens because there is water vapour between the panes, probably caused by old seals drying out and allowing moist air in. When you splash cold water on the glass it cools the air inside and the vapour condenses on the glass, just like the condensation on the outside of your nice cold glass of lager
When the air warms up, the condensation evaporates again.
Hopefully :
