Got a little mould in the shed where I store my water that I'm going to have to deal with soon but no flies.

Realy tiny little flys are known as fruit flies, so I can't understand why they keep appearing in your van

Attracted to all types of sugar- install an aviary then the birds will eat them.
If its warmer down south and spring is coming (hopefully) they are probably breeding
never heard of it before so it must be something in the van.

If they are really tiny and seem float around they are either fruit flies- but a bit early, or mosies. Nothing can live in RO/DI water for very long.
Maybe your staff have been drinking/spilt cider.
