In the first of those pictures would anyone know what the name of the fitting which goes from the hose to the back of the male hozelok fitting, hope this makes sense.

I'm not sure unfortunately, I'm sorry for that. Try giving Gardiners a go, they might have one.

My setup is similar to those picture's but i have female hozlock stop fittings instead that way i just leave the pumps on all day and when i turn off the water flow the pumps stop.

When finished for the day just turn pumps off.
