employee contracts

hi .
i have been looking at getting contracts drawn up and it seems that they are not easy to enforce .
how do you stop an empolyee from trying to nic your work .
you can have it in the contract that they cant contact your customers outside thier duties ,but if they do its very difficult to enforce .

what do you guys do .

if you think an employee is going to nick ur work  then dont employ,   there is not much u can do to stop them, as you dont own the custys, so they can go with who ever they want
