looking at getting a new system either a
used ionics 1000 litre system
1000 litre ibc and have a stainless frame made
or 2 layflat 500 litre tanks
to be fitted in a vw transporter t5 t32

2 layflat tanks would be the safer option,.. still get a frame made up though, 1000kg of water needs a lot of restraint!

with 2 tanks do you get problems with water flow, if parked on a hill and water runs away from tap?

Flat tanks have the benefit of safety. The lower any amount of water is to the floor the safer the vehicle is overall. Downside is that when you get down to the last 2 inches of water unless you park in such a way that the water runs down to the tap then you run the risk of drawing air into the system or not getting any at all.
Upright tanks unless secured tightly are less safe in travel but you have less hassle with getting those last few inches of water out.
Personally I use two upright tanks.
