Hi I wonder if you can help me, I am thinking of going into cleaning commercial kitchens. What equipment and chemicals would you recommend ?
Also what kind of man hours are required ?
Also what would you price the work at ? some kind of ballpark figure will help.

First question I have to ask is have you ever done this kind of work before because it is a real mine field and you can get into a lot of trouble if you dont know what you are doing...

Not that I know of I learned by working for someone else
You will need
Heavy duty hot dip tanks
Cold rinse tank (not essential but it really does help)
Heavy duty steamers (not the £100 ones from Argos)
Heavy duty scrapers
Heavy duty de greasers for stainless and ali
Heavy duty floor cleaners
A powerful bactericidal cleaner
Gel oven cleaners
All chemicals must be food safe chems and for ease of life commercial grade not the ones from ASDA. I was allways told we are professional cleaners so we use professional product. Nothing looks worse than a company turning up with nothing more than domestic products.
The list goes on and on the main thing is the hard work that is need to be put in at unsociable hours and usually under pressure of time as the custy needs the kitchen clean asap
Pricing god that really is how long is a bit of string only experience will tell you how long it will take but allways add in extra as there will allways be somthing that takes much longer to clean.

i do afew kithens on a regular basis i charge £15 an hour for general cleaning and eqiupment charged at standard rates. like i say some places have not got the money. i would rather take a price i am happy with than do a job and not do again because they cannot afford. alot of hard work and you go home smelling like a chip fryer.

Hi ive been cleaning commercial kitchens now for some years
You need a Heated dip tank with caustic soda
Heavy degreases Evans Lift is good
Steam cleaners
A lot of hard work
Risk assesments and method statements

Never under estimate the time it takes and most importantly ask the clients expectations are if ther equipment has never been cleaned and is old its never going to look like new

you will also have to find out of they are HACCP which is set down by the Food standards agency for food processing/preaprartion areas and will have to be HACCP yourself. It is a minefield to go into, as at the end of the day the general public are at risk if cleanliness programmes are not followed. As for potential customers who "cannot afford" much....stick well clear, these will defo be ones that do not follow the guidelines and put their own customers at risk, which just may lead to......blame the cleaners
