commercial cleaning.

I just soak in a degreaser, scrub and rinse. If they are done regularly you should have no problem.

If you are working in a kitchen or food production area, you have to use a degreaser that is safe for the kitchen and surfaces that it may come in contact with. "Foodsafe" it also has to be odourless, you are better of cleaning the canopy by hand, remember that you cannot stand on any equipment, tables or surfaces below, you must always sheet up anything under the canopy and when finished sanitise all surfaces. Just incase.

i have seen a foam that you spray on and leave for a bit before cleaning it off, using a steam cleaner. anybody know anything about it

We've been asked to quote on an extractor hood and filters in a small factory canteen today. It's not something that we normally do but it's for a mate and the money is good.
Thinking of having a go at it. Any pitfalls to watch out for?

Pitfalls.
You come out wearing a fragrance called "eau de chippy" and the need for 2 showers.
Not the nicest of jobs with your head up a canopy, satisfying to see the end result though.
