taking someone on in the new year. and have been to the accountant and been given all the sheets to work out tax and NI and all that, is there any programs that do this for you?

You can enrole on a course so you know how to use them too ;D ;D

Quickbooks, it's the simplest one for non accounting people, takes a few minutes each week to process payslips.

for example, if i pay him £50 a day for 3 days a week, pay would be £150, would i put £150 into the program and it would tell me what to pay him yes?

The Inland Revenue do a CD each year that has many many helpful things on it including working out PAYE and NI - even fills in a P11 Deductions Working Sheet which you need at year end.
Go to http://www.hmrc.gov.uk/ and see the middle blue box at top of page, 2nd down Employer CD Rom.
Something very useful from the Inland revenue is this CD - but don't loose it!

The Inland Revenue CD will do everything you need.
You fill out
what week it is
His/Her tax code
How much you paid them
How much tax they have paid to date
Click calculate and its done for you
Same with there NI
You also can get a a paying in book so you can pay there NI each month online
