Title: honing flag stone floor

I am quoting to strip ,clean and seal 100sq mtr of flag stone in a kitchen.
The stone looks like it has had a topical sealer with a high shine on it , custy hates the shine and wants a natural look.

I am a tad concerned a stripper may struggle to remove all of the sealer. Would using honing powder after stripping remove any residual?  I intend to hone the floor any way before using impregnating sealer.
