I have been asked to do a deep clean on a pub kitchen and I was looking for any advise I can really.

It is going to be a nightmare and thats why they are subbing it - it will take twice as long as you imagine and if you are not to experienced at these then I would sub it and join in

im not to worried as they guy cleaning it with me is chef and has an issue that means he likes cleaning haha.
also its not a sub job its direct from a landlord that only wants me to do it. What i really want is some good suppliers for kit really.
