Hi Guys,
I have to clean an Aluminium commercial kitchen hood and extractor with the fan almost directly behind the hood (ie no ducting). I am used to stainless steel but this hood is so filthy the grease may have to be removed with a chisel in the channels and everything behind the baffles is dripping with grease. I wondered what the best chemicals were to degrease and decarbonise the hood and fan were, bearing in mind the sensitive nature of aluminium. I will be steam extracting the external and accessible vertical surfaces as these aren't too bad. Then possibly foaming the canopy internally. The suppliers I use are not much help they all say "just use a standard degreaser".
If you could advise on chemicals, suppliers of chemicals who could advise I would be very grateful.
I would love to farm it out but it is being done for a friend at such a low cost (£150) that this is impracticable.
Any help would be much appreciated

I have decided to use metasoak as this seems to be the only product that will decarbonise aluminium effectively. Any other thoughts would be appreciated.

I have not tried this but HD2000 from merlin chemicals is safe on aluminium

I can supply you a aluminium safe chemical that I regularly use
for Commercial kitchen and extraction deep cleaning.
