just bought an immersion heater and mechanical flange from toolstation at last :)
so what sealant should i use when fitting and would a 16amp reel from toolstation be up to the job?

Think it goes like this Amps = Watts divided by Voltage.
If you have a 3kw heater that is 3000 Watts.
3000/240=12.5 Amps just safely under the standard 13 amp commonly used.
However bear in mind that is for a straight cable run - coiled round a reel is not a good idea as that will increase the resistance of the cable.
Sure bobplumb or others will advise regarding sealant!!!

as it happens i was just lurking around :D
i used a good squally silicone sealant and applied to both sides of the tank one application on the immersion flange/face and an other on the locking nut/flange with a rubber seal on the water side of the tank

No sealant on my flange, just ptfe on the element thread. Never leaked a drop in almost 2 years. The flange wants to be tightened as much as poss. ;)

Any type of silicone will be fine as long as its clean. Or you could be clever make a gasket and use sealant as well not necessary though ;D

There is a fiber washer that comes with the element, that's on too.

do chemicals leach from particular sealants or are they ok and wont affect my tds when fully cured?

What type of tank do you have I have a 400 ltr lay flat what type of heater would be best?

i have an ibc 1000ltr tank, just bought the 27" immersion heater but will only fill it to about 350-400 ltrs of water depending on what work i have on particular days. If im correct and yours is baffled like the one i used to have a 11" immersion is prob more suitable. Somebody who has the same as you could prob advise more. I bought both falnge and immersion from my local toolstation!

No i baffled it myself and have never had any problems with roll when filled with water.
