the place i've just moved into has really dirty oven trays. rather then spending an evening scratching away at them would be nice if i could leave them for a few days soaking in something so that the dirt easily breaks off. any suggestion what i should try?

Noticed you offer oven cleaning on your website, what would you normally use ??? ;D
Personally I soak them in a diluted caustic soda, after an hour or two a quick rub with a wire brush and they come up like new.
Just make sure you do it in a well ventilated area (preferably outside) and wear appropriate PPE. You don't wanna get it on your skin.

oven cleaning is offered but sub contracted out. works well with eot cleans

if you want to avoid the caustic, Any good de-greaser, in a tub with hot water will do tyhe trick, just give them a scrub with wire wool in hot soapy water after a soak.

I'm not an oven cleaner but I was working on an EOT cleanup recently where the whole place was minging and the oven particularly so. The man cleaning the oven there using caustic soda.
