What is the composition of them? Guessing cement residue removers would be sufficient to remove??

Some are mixed with Latex and not water, not sure if this makes it harder to remove.

latex is in the rubber family - I guess its more of a sealing and coating remover job if that's the case

There are dozens of different Self Levelling Compounds made from anything from Sand & Cement with additions of  Polymers, Latex, Fibre and now even Resin.  Some need to be mechanically removed and others will move with Strippers and or Alkaline.  As in all cases do a test first to establish what is required.
